Super Easy Potatoes
I love those packaged, cooked potatoes you find in the refrigerated section of your grocery, sometimes in the produce and sometimes by the cheese and eggs. The brand I always see is called “Simply Potatoes.” They make having potatoes for dinner a snap; I just wish they weren’t so expensive. But if you’re in a hurry, you can’t beat them! Here’s a quick and easy recipe using “Simply Potatoes.”
Pan-Roasted Greek Potatoes
2 tbsp. olive oil
1 package of Simply Potatoes new potato wedges
1 tsp. Greek seasoning
Salt and Pepper to taste
Heat the olive oil over medium heat. Add the potatoes, and cook about 10 minutes, stirring frequently. Remove from the heat, and sprinkle with Greek seasoning, salt and pepper.
You could certainly substitute something else for the Greek seasoning. Garlic is a good choice, and fresh rosemary would be absolutely delicious!
