Quick and Easy for College Life

We have been stocking a kitchen from scratch, and it’s certainly been an interesting experience. Our twins are starting to college next month, and we are at freshman orientation. In between meetings and seminars and pep rallies, we have been putting together their apartment.

Our goal has been to get the pantry filled up with items that are extremely quick and easy, yet somewhat nutritious. We’ve bought cereal, peanut butter and other staples. Uncle Ben’s new microwave rice seems to be a good investment. Perfectly cooked rice in 90 seconds!  Muffin mixes are another favorite. Velveeta shells and cheese is still another.

My daughter is delighted with anything in individual containers. It’s not exactly the cheapest way to go, but if tiny servings of corn in their own plastic containers will get her to eat a vegetable rather than running to Sonic, so be it.

My son, on the other hand, does like to cook, although his interest is more in the area of grilling. Still, I know both he and his sister will be busy, and so there is definitely a need to find quick and easy dishes. Please help me out! Any ideas?
