Quick and Easy Mexican Fiesta

A Mexican fiesta is a go-to meal at our house. Everyone in my family loves Mexican food, and when extra teens show up, it will s-t-r-e-t-c-h.  Tacos, quesadillas, enchiladas are all easy to assemble when you’ve got the basics in your freezer and pantry.

Whenever I buy ground beef on sale, I always turn some of it into taco meat for the freezer.  Tacos or burritos are just a microwave away.  The meat can be defrosted in no time flat, while you sauté some pepper strips and onions.  I try to keep sliced strips of peppers in the freezer, too.  Use the multi-pack of green, red and yellow peppers to add color to the meal.   

Quesadillas are another family favorite, and you can tailor them to individual tastes.  Cheese only?  No problem.  The works, with ground beef, peppers and onions?  Ready in a flash.With already shredded cheese, a rice mix in a box and a can of refried beans, you’ll be doing a Mexican Hat dance because dinner’s on the table so quickly.  And your family will love it.
