Frozen cooked shrimp has got to be one of the greatest inventions for the modern cook. I adore shrimp, but I absolutely hate to peel and devein. This quick recipe for Shrimp Scampi is easy enough for the weeknight madness, but elegant enough for a romantic dinner for two.

All you do is melt one whole stick of butter (yes, one) in a skillet. Chop up an onion and cook for about three minutes. Add some chopped parsley and about a tsp of minced garlic. I always get the refrigerated garlic that is already peeled and minced. Cook for just a few more minutes. Add the cooked shrimp that you have defrosted. Stir, and when everything is hot, serve over rice. Delicious!

You can also serve the shrimp over pasta. Or, just plate it up and pass as a fantastic appetizer. Spear with toothpicks.

Quick and Easy Cooking!

What’s for dinner? And if you know, then who’s got the time to cook it? I grew up with the June Cleaver mother who did a meat, three vegetables and a homemade dessert every single night. I’ve tried to do that, too, but it just doesn’t work in the 21st century. I have a husband that works way too many hours and a set of busy teenage twins (with lots of hungry friends). As for me, I’m a full-time freelance writer, and I also do the billing for my husband’s office. While I love to cook, and consider myself a fairly serious cook, I don’t find those big chunks of time too often, and I usually need to pull together a quick and easy meal in a matter of minutes.

 

If you chose to read a post about quick and easy cooking, then you can probably identify with me. Maybe you’ve got a full time job with a two hour commute, or maybe you’re a new mother trying to function on three hours of sleep. Or, perhaps you’re just tired of spending so much time in the kitchen. Whatever, just like me you’re looking for delicious, yet easy recipes. I hope we’ll share some tips and tricks, as well as some tasty dishes.
